Doing that is a lot like doing high-res traditional animation instead of pixel art - so I suggest finding the pixel art style of 3D modeling and doing that instead. You can also burn a ton of time if you try to go the whole high-detail sculpted/PBR/AAA approach. There's a lot more skills you have to learn too - unintuitive stuff like UV unwrapping and weight painting.

And learning to model a nice character is one thing but you need to unpack, texture, rig and animate it too and they all come with there own learning curve. To start learning 3D you pretty much have the same curve since the tools that let you produce 3D are huge. To compare this with 3D is a little awkward.
The thing is, real pixel art is severely restricting yourself as an artist and thus making it a lot more complicated.
